Course “Corte de Jamón”
The new standard of the iberian ham, has created different classifications of Iberian ham, during this course we will learn to know them a little better and above all we will go out knowing how to cut and make the most of a piece of ham.
Course Details
- Duration: 8 hours (1 day)
- Participants: Minimum 1 and maximum 5
- Target: Ham Lovers, the level of the course is determined by the degree of knowledge of the assistant.
- Goal: Teach the different types of hams existing in the market, how to choose a good piece and how to cut it.
- Includes: 1 cereal feed iberian ham Julián Becerro by person, insurance of civil responsibility, entrance to the museum “Espacio del Jamón”, diploma accrediting of attendance to the course, embroidered apron and the vacuum packing of the ham that has sliced.
- Program: Basic tools for cutting ham, varieties and types of ham before a choice, cleaning and profiling of the piece, the first cuts, the straightness in the cut, the thickness and adequate size of the slice and the perfect slice.
During the course audiovisuals will be screened: «Aprende a cortar jamón con Virgilio Sánchez», «Platos de presentación» and «Presentar un plato artístico de jamón de tirón”
- Price per person: € 300 (in groups of 3 to 5 people)
- Groups of less than 3 people or individual «master class» have a supplement of € 50 per person.
- If you want to provide the ham for the course, we discount €100 of the final price.
